Course Summary

The HND top-up in Hospitality Management provides a specialist work related programme of study that covers the key knowledge, understanding and practical skills required in the hospitality industry and also offers particular specialist emphasis through the choice of specialist units. The qualification prepares students for employment in the hospitality industry and is suitable for learners who have already decided that they wish to enter this area of work. Higher National Diplomas provide a nationally recognised qualification offering career progression and professional development for those already in employment as well as opportunities to progress in higher education. The HND in Hospitality Management equips students with the skills in a hospitality management context, including investigatory and research skills, focusing on management issues within the context of hospitality. This course provides opportunities for students to develop attributes and techniques essential for successful performance in working life within various sectors of the hospitality industry such as licensed retail, food and beverage, hotel and events management. Programme Content: The core mandatory units studied are as follows: • The Contemporary Hospitality Industry • Managing the Customer Experience • Professional Identity and Practice • The Hospitality Business Toolkit • Leadership and Management for Service Industries. Optional units at level 5 are as follows: • Managing Food and Beverage Operations • International Gastronomy • Work Experience • Research Project (Pearson-set) • Hospitality Consumer Behaviour and Insight • Menu Development, Planning and Design • Food Service Management • Revenue Management • Managing and Planning an Event • Sales Management.

Course Details – Assessment Method

Assessment will predominantly be conducted through: - A portfolio of documentary evidence of participation and the achievement of learning outcomes - Assignments based on case-study work (e.g. research essays) - The production of reports, analyses and reflection - Presentation, both individually and in groups - Regular assessment of learning – including informal, formative assessment mid-semester and formal, summative assessment at the end of each semester - Development and delivery of a front of house event - Educational visits to Michelin Star Restaurants and other restaurants for critique of gastronomy (included in assignment).

To apply for this programme, applicants will be required to hold a Higher National Certificate or equivalent level 4 certificate of higher education in a relevant subject.

It is expected that all applicants will hold relevant Level 2 maths and English qualifications equivalent to GCSE grade C/4 or above. Mature students: The University Centre welcomes applications from mature students who have relevant experience in lieu of the minimum entry requirements. Mature students (over 21) without formal qualifications may be accepted subject to satisfactory literacy and numeracy tests, work experience (if applicable) and a strong personal statement.
